  • sliced jalapenos
  • sliced avocados
  • dollop of sour cream
  • minced fresh cilantro
  • tortilla strips
  • shredded Monterey jack or Mexican cheese

INSTRUCTIONS

  1. Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
  2. Top with diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth and cilantro.  Stir.
  3. Cover and cook on LOW for 8 hours or on HIGH for 3-4 hours.
  4. Remove chicken to large mixing bowl, shred, then return to slow cooker.
  5. Add cream cheese and half and half, stir, then cover and cook on HIGH for 15 minutes, or until chili is creamy and slightly thickened.
  6. Stir well and serve with desired toppings.

  9. Next spread the remaining toppings mixture over the cheese followed by the pepperonis (save 10 slices for the top of the casserole), remaining � cup of pasta sauce, and 6 ounces of mozzarella cheese.
  10. In a small bowl mix together the Parmesan cheese and Italian seasoning.
  11. Sprinkle the Parmesan mixture over the casserole and top with 10 slices of pepperoni.

INSTRUCTIONS

  1. Preheat the oven to 350�. Line the bottom of two 8 or 9-inch cake pans with parchment paper, grease and flour the sides. (The parchment paper will make the cake come out much easier than just grease and flour).

  6. Pour the batter into the two prepared pans and place in the center of the preheated oven. Bake for 30 to 35 minutes for the 9 inch pans or 33 to 37 minutes for the 8 inch pans (a toothpick inserted in the center of the cakes should come out clean).
  7. Let cool in the cake pans for 5 to 10 minutes then run a knife around the edge of the pans to loosen the cake from the pans. Invert the cakes onto a cooling rack and remove the parchment paper. (At this point if you re-invert the cakes onto another rack and let them cool with their tops up, they will retain more height and the tops of the cakes will not stick to the cooling rack.)
  8. CREAM CHEESE FROSTING:
  9. To make the cream cheese frosting, combine the cream cheese and butter, and beat until soft and creamy.
  10. Add the powdered sugar and vanilla beat on low speed until the sugar is mixed in then beat on high speed until smooth, about 2 to 3 minutes.
  11. Assemble the cake:
  12. If you baked in two pans:
  13. Slice each layer of cake in half horizontally by using a cake leveler or by placing each layer of cake on a turntable and use a serrated knife to slice through the cake as you turn the turntable. This will give you 4 layers to fill and stack. To transfer each layer, use a thin plastic cutting board to slide under the layers.
  14. Put a dab of frosting on a cake plate and place a cake layer on top of the plate. Use 3/4 to 1 cup of frosting to spread between each layer of cake then use an off-set spatula or knife to ice the top and sides of the cake.
  15. If you baked in four pans:

  10. Line up the other half of the pumpkin shapes on top of the bottom pumpkin shape and the pumpkin mixture. Press the edges closed slightly with your fingers.
  11. Using a fork, press around the edges of the pumpkin shape to seal it completely.
  12. Brush the top of the pumpkins with the beaten egg.
  13. Bake at 350F for 20 to 25 minutes until golden brown. (I baked mine for 23 minutes).
  14. For the Glaze:
  15. Combine the icing sugar and vanilla extract in a small bowl. Add the maple syrup, 1 Tablespoon at a time until you have a slightly runny glaze. (I used 3 Tablespoons of maple syrup, but you might need slightly more or less).
  16. Pour the glaze into a zip lock bag, seal it closed, then cut off a small corner of the bag.
  17. Gently squeeze the glaze over the mini pumpkin pies.
  18. Enjoy!

Ingredients

  • 3.5 cups corn (fresh, canned, or frozen)
  • 1/2 large red bell pepper diced
  • 2 fresh jalapeno peppers diced (seeds/veins removed)
  • 3-4 TBSP diced pickled jalapeno peppers plus extra to taste
  • 2.5 TBSP butter
  • 4 oz cream cheese
  • 1/4 tsp paprika (regular, not smoked)
  • 1 cup freshly grated sharp cheddar cheese
  • salt and pepper to taste
  • EXTRAS:
  • hot sauce
  • extra cheese for topping
  • extra jalape�os for a fiery kick!
  • spicy green salsa see note below
  • cilantro or parsley for topping

Instructions

  1. Pre-heat oven to 350 degrees F.
  2. Thaw corn if using frozen.
  3. Chop all your veggies and set aside.
  4. For tender peppers, feel free to saut� your bell peppers and fresh jalape�o to soften.
  5. In a medium saucepan, combine butter and cream cheese.
  6. Stir often until smooth and creamy.
  7. Add your corn, bell pepper, jalape�o pepper, and pickled jalape�os.
  8. Season with paprika, salt, and pepper to taste.
  9. Stir in 1/2-3/4 cup of cheddar cheese and stir until fully melted.
  10. Pour into a casserole dish and top with remaining cheddar.
  11. Bake for 15-20 minutes or until hot and bubbly!

Brazilian Lemonade is a rich, smooth, invigorating lime drink local to Brazil. This rendition is much the same as the one Tucanos Brazilian Grill makes!

Out of appreciation for my 33rd birthday tomorrow I'm sharing one of my preferred beverage plans! Think of it as my birthday present to all of you. I realize that sounds a piece in reverse yet I generally believed it is beautiful to have the option to give presents on your birthday as opposed to getting them!

Brazilian Lemonade sounds in reverse as well. It is designated "lemonade" however there are no lemons in it � just limes. Don't as me why � I haven't the foggiest! What I do know is it is strangely great and that one beverage will have you snared forever. Apologies, yet at any rate I cautioned you?

A few adaptations of this formula assemble for mixing limes with the water and so on. I find that makes the beverage harsh more often than not. My form is less difficult and is reliably astonishing.

Ingredients
  • 6 cups cold water divide
  • 1 cup bakers sugar or granulated sugar
  • zest of 2 limes
  • 1 cup + 1 Tbsp. fresh squeezed lime juice
  • 1/2 cup sweetened condensed milk

Instructions

  1. Measure 3 cups cold water and pour into a blender. Pour the other 3 cups of cold water into the pitcher you plan to serve in.
  2. Add the sugar, lime zest, lime juice and sweetened condensed milk to the blender.
  3. Holding the lid down firmly, blend the mixture until everything is combined and frothy. Pour contents of blender into the pitcher of water and stir to combine.
  4. Serve the drink in glasses of ice and garnish with lime wedges.
  5. Lime Juicing Tip: Use your hand to slightly flatten a lime against the counter or cutting board and roll it several times. This will help to release the juice.
